On any given day at Lilac Pâtisserie, pastry chef-restaurateur, Gillian Muralles, can be found behind the bakery’s signature cake counter meticulously crafting a one-a-kind masterpiece. It’s her specialty: luxurious cakes with incredible texture and delectable taste. The twist? Everything she makes is gluten-free.
Gillian is dermined to change the landscape of gluten-free dining and desserts. Along with her husband, Alam Muralles, the two have been hard at work on their passion project: Lilac Pâtisserie, a dedicated gluten-free bakery and café, in the heart of downtown Santa Barbara—the first of its kind.
A diagnosed Celiac, Gillian’s focus as a pastry chef has always been gluten-free baking as well as inspired custom cake decorating. Alam worked his way up the kitchen ranks to become a bakery operations expert. Together, they’ve worked years to prepare for the opening of Lilac Pâtisserie—carefully developing recipes to meet their uncompromising standards and honing their pastry and decorating skills.
“We plan to shift the stigma of gluten free from lacking to over-the-top amazing,” says Gillian. “Setting the whole gluten free thing aside, we are redefining what cake is and can be for the people of Santa Barbara.”
Lilac Pâtisserie’s welcoming space includes a full-service Italian espresso bar, bistro dining, and the Cake Counter, a decorating station where Gillian, Alam, and the Lilac Pâtisserie cake artists skillfully sculpt, craft and design each masterpiece.
